Ritz Cracker Chicken

We got tired of eating the same things and needed a spin on our Goya marinated chicken. I had an "ah-ha" moment in remembering a recipe my roommate used. I did a little searching, but none of the recipes I came across looked anything like I remembered. So this is my take and has become a family favorite!

Ritz Cracker Chicken:
Ingredients:
5 pieces of Chicken Breast (thawed)
2 eggs
1 tablespoon of water
1 role of Ritz crackers

Directions:
1. Preheat the oven to 375 degrees
2. Whisk together eggs and water in one bowl.
3. Crumble the Ritz crackers into small fine pieces in a second bowl. (I crumble the crackers by hand, but you are welcome to use a food processor or blender.)
4. Take 1 of the chicken breast and dip in egg wash then dip in Ritz crackers. Coat all of the chicken then place on a baking pan (I used a Silpat.)
5. Repeat until all chicken breast are coated.
6. Cook for approximately 40 minutes or until golden brown.
7. Let cool for about 2 minutes and then serve!

* Note some of the cracker coating will come off and stick to the pan.

Teething Biscuit Recipes - Italian Cookies (DAIRY FREE)

We were a little slow in introducing Izzy Mae to teething biscuits. I never had heard of them. I know crazy, but to be honest I never had gone down the baby food aisle. Then the mister mentions teething biscuits. (Cue the heaven sound) He does a little research on the inter webs and came across this recipe.

Teething Biscuit Recipe- Italian Cookies (Dairy Free)

Whilst still firm, these cookies are a little softer than the ones produced by the recipe above.
2 small eggs
4 oz (1 cup) icing sugar/confectioner's sugar
4 to 6 oz (1 to 1 1/2 cups) flour
1/2 tsp baking powder

Using an electric mixer, whisk the eggs with the sugar for around 5 mins, until thickened and creamy.
Mix the baking powder with the flour, then gradually add the flour to the egg mixture. Increase the amount of flour if the mixture is too sticky.
Coat the palms of your hands with flour, then shape the dough into cookies.
Place on a baking sheet/cookie sheet.
Preheat the oven to 375 deg F, 190 deg C.
Bake for around 20 mins until golden brown and firm, then cool on wire racks.
When completely cool, store in an airtight container.

She takes the biscuit everywhere with her.
